Slight chance of rain!

3 meat Chili!

2 small cans of beans of your choice (I used red kidney beans) or 1 big can
6 slices bacon
3 sausages, I use mild Italian kind
1.5 pounds ground beef
2 cans of fire roasted tomatoes, 28 ounces total
3 cloves of garlic
1 tbs cumin
2 tbs unsweetened cocoa
1 tbs chili powder
1 tbs paprika (I used the smoked kind)
1 small can of tomato paste
Optional: 1 small can of spicy Mexican tomato sauce, I used El Pato

I use a Dutch oven.

Brown bacon and set aside
Brown sausage and beef in the bacon grease, drain and set aside
Add tomatoes and let simmer, add tomato paste and let the sauce come to a boil.
Add beef/sausage and bacon
Add half of the seasonings to the mixture, add the beans
Let simmer for around 20 minutes and taste! before adding more spices.
Finish off uncovered in the oven for 30 minutes.

I found Chiplote powder and it gave it a really nice kick without making it too spicy.

Roasted potatoes

Do you ever buy those pre-made potatoes with garlic and rosemary?
Or the potatoes out of the freezer section?

One such product has 130 calories. 13% Sodium or 310mg.
And that is for .75 of a cup.(my kid easily eats 2 cups)
As for the ingredients :
Potatoes, Vegetable Oils (Sunflower, Cottonseed, Soybean and/or Canola), Modified Food Starch, Contains 2% or Less of: Rice Flour, Salt, Tapioca Dextrin, Cornstarch, Spice, Black Pepper, Leavening (Sodium Acid Pyrophosphate, Sodium Bicarbonate), Dextrose, Garlic Powder, Xanthan Gum, Disodium Dihydrogen Pyrophosphate, Annatto (Vegetable Color).

I’m a label reader and I don’t know all of those words but I do know the shorter the list of ingredients minus the highlighted words is way healthier for my family.
Yes the frozen food section is sometimes way faster and I have dipped in there before.

However since starting the blog I’ve recreated dishes I used to buy pre-made.

We love these potatoes and you can make these ahead a few hours before.

Garlic Rosemary oven potatoes

  • 4 large or 6 medium uncooked potatoes
  • 1 sprigs Rosemary
  • 2-3 cloves of garlic crushed
  • 1/2 cup olive oil
  • 1teaspoon salt

    Cut the potatoes in cubes, I try to get more oblong shaped potatoes and cut those first in half lengthwise and then those parts in half lengthwise and then in “cubes”.
    Cut the rosemary up in chunks and combine all ingredients coating the potatoes well with olive oil.
    Marinade up to 4 hours.

    Preheat the oven to 375
    Put the potatoes on a baking sheet and cook for 30 minutes, do not turn!
    Toss the potatoes and cook for another 20-30 minutes or until fully cooked.
