Build your own salad.

I like salads and I like variety in a salad. One of my favorite salads has always been Salade Nicoise. Lettuce, tuna, olives,boiled eggs,tomatoes,green beans, radishes,anchovies…oh my!
That is one happy plate of food!
But, I don’t care for the green beans, Little Man and Resident Teen don’t like radishes.
And Himself loves anything food. So at our house the salad is in one bowl and all the “fixings” are set next to it and you can make your own salad.
I replaced the green beans with avocado or steamed asparagus, there’s cucumber as well.

Seared Tuna Nicoise
1 tuna steak
(or 2 cans of tuna in water, dranined)
2 heads of romaine lettuce, cut in chunks
2 tomatoes
1 cucumber
4 eggs
4 ounces green beans, steamed
1/4 tsp each op salt, pepper, tumeric, garlic or onion powder and curry powder mixed together
2 avocado’s
Rub spice mixture on the tuna
In a pan on high heat sear the tuna on each side for 2 minutes on each side, set aside to cool in the fridge
Boil eggs and set aside to cool in the fridge
cut tomatoes into slices
cut cucumber into slices
when eggs are cooled down either slice or quarter them
For the dressing:
2 tsp mustard
3-4 tbs olive oil
1-2 tbs balsamic vinegar
pinch of salt and pepper
I serve the dressing in separate bowl as well as the anchovies.
On a nice platter arrange all the ‘sides’ and serve the romaine in a separate bowl as well.
