Fast breakfast

There’s an ap for breakfast! (and lunch and dinner)
I downloaded one called “Sparkrecipes”, it’s free and it has a lot of recipes I want to try.
This recipe is Atkins/Low Carb friendly.

Baked Egg Cups

6 slices deli ham
6 raw eggs
1/2 cup cheddar or mozzarella cheese
salt and pepper to taste
parsley or chives for decoration

Preheat oven to 350
Spray 6 cups of a muffin tin with cooking spray
Arrange the ham in the cups so that the make a small “cup”
Bake for 5 minutes
Remove from oven and break an egg into each cup. (you can either gently break the yolk or leave it intact)
Sprinkle with salt and pepper
Return to oven to let them cook for 10-15 minutes depending on how firm you like your eggs.
If they are done to your liking remove from oven and sprinkle with cheese and chives.

Variations of this recipe:
scrambling all 6 eggs and adding a pinch of curry and 1/4 chopped up shallot
scrambling all 6 eggs and adding finely chopped tomato and a little dash of hot sauce

These keep well in a closed container for a day or so and are great portable snacks.
When made from the original recipe they are 128 calories and a whopping 14 grams of protein!
