Not in the mood for boring food


It had been my plan to make pork chops, curried leeks and potatoes for dinner but it seemed a bit, well blah.
A quick check in the fridge showed I had little bell peppers and basil left over.
With a little thinking and tasting I came up with a new recipe.

Curried pork with leeks.

4 pork chops cut in thin strips
1 leek, cut small
half-1 bell pepper or 4-5 small “snack-sized” bell peppers, cut in strips
1 cup bean sprouts
1 tbs cumin
1 tbs curry powder (not spicy)
3 tbs curry paste, I used Madras curry paste
1/2 cup coconut milk
olive oil
2-3 basil leaves cut small

Sautee leek in olive oil, do not burn
Add bell pepper and curry and cumin
let simmer until soft
move leek mixture to a bowl and add olive oil to pan
add curry paste to pan and quickly stir fry meat until brown on medium heat
add leek mixture, coconut milk and mix well
bring back to a boil and turn heat down low
add bean sprouts and basil
simmer for an additional 10 minutes
serve with noodles or brown rice.
