Mussels from where?

One of the foods I missed the most in our early days in California were mussels. In the Netherlands they are in season in any month with the letter R. Here it was hard to get by until we found them flash frozen at Safeway. We liked the taste but they were not “home cooked”. A few months ago Himself on a trip to Costco brought back a bag of fresh mussels. This is a recipe that is so good it makes us want more and more!
5 pounds mussels
2 small leeks, cut in chunks
1 carrot, cut in chunks
5 cloves garlic
2 tbs parsley
1/2 bottle white wine
in a large pan put all vegetables, garlic, parsley and wine and bring to boil
rinse mussels, discard broken ones.
Lower heat
add mussels to vegetables and simmer until they open.
Serve with French bread.
