Pork Chops to cry over

3 types of onions to cut, that should make you shed a little tear, no?
My kids love, adore, worship onions. Little Man knows the value of a good caramelized onion. With Fall lurking around the corner pork makes it’s entry onto the menu in this house.

4 thick pork chops
1 yellow onion
2 tbsp chives, freeze dried works.
2 medium shallots
2-3 cloves garlic, crushed
1 cup mushrooms
2 tbs butter
1/2 tsp salt
1/4 tsp pepper
slice all the onions and the mushroom thinly
in one tbs butter and medium heat cook onions and garlic, season with half of the salt and pepper
add mushrooms when onions look “shiny”, make sure to not burn the mixture.
salt and pepper the pork chops with remaining half of the seasonings
saute in separate pan until brown on both sides.
Lower heat and add the onions and mushrooms
cover the pork chops a little with the mixture this will give them a great taste.
cover with lid and let simmer for 10 minutes
