From 0 to done in 10 minutes

One day Little Man was sick at home. He was hungry but nothing was tempting to eat. With big blue puppy eyes he requested Cream of Mushroom soup. Could I whip that up for him, fast?
This soup is not only fast, it’s easily “dressed up” for fancier meals. It takes more time to cut the mushrooms than to make the soup.

Special request Mushroom Soup

4tbs butter
3/4 cup flour
1 pound very thinly sliced mushrooms
4 cups chicken broth
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
1 cup light cream or heavy cream

On low heat melt butter
slowly add flour using a whisk, the mixture will look lumpy
cook the flour/butter on low heat for 4 minutes
whisk in chicken broth in little batches and mix until smooth
add thinly sliced mushrooms
season to taste
add cream

To fancy this up you can make your chicken broth from scratch and add chicken to the soup. Fully cooked shrimp or crab give it an extra kick.
